Overview

Crossing-the-Bridge Rice Noodles is a unique traditional snack from the Diannan region of Yunnan Province, belonging to the Yunnan cuisine system and ranking first among Yunnan's top ten famous foods. This delicacy originated in Mengzi, Yunnan, and has a history of over three hundred years. In 2014, the "Mengzi Crossing-the-Bridge Rice Noodles Craftsmanship" was included in China's National Intangible Cultural Heritage List.

Crossing-the-Bridge Rice Noodles is renowned for its superior broth, rich accompaniments, complex and meticulous preparation process, and unique eating method. Its most distinctive feature lies in the "crossing-the-bridge" dining style—diners must follow the order of adding meat before vegetables and raw ingredients before cooked ones, placing various ingredients one by one into the piping hot broth to cook them, and finally adding the rice noodles.

Origin Story

The origin of Crossing-the-Bridge Rice Noodles has a widely circulated inspirational story. Legend has it that during the Qing Dynasty, there was a small island in Nanhu Lake in Mengzi, where a scholar studied diligently for imperial examinations. His wife brought him meals daily, but because the journey required crossing a stone arch bridge, the food would be cold by the time it reached the island.

Once, the wife cooked a pot of chicken soup and brought it to the island. She discovered that the surface of the soup was covered with a thick layer of chicken fat, and although the soup had cooled, it remained very hot. She placed rice noodles and slices of meat into the soup, and after they were cooked, found the taste to be extremely delicious. From then on, she used this method to bring meals to her husband. The scholar eventually passed the imperial examinations with honors.

Because the meal delivery involved crossing a stone arch bridge, this delicacy was named "Crossing-the-Bridge Rice Noodles."
