Overview
Roujiamo is one of Shaanxi's most iconic traditional snacks, widely known as the Chinese hamburger. In Shaanxi, roujiamo is paired with liangpi (cold noodles) and Bingfeng soft drink to form the Three Qin Set, a signature symbol of Shaanxi culinary culture. In 2016, roujiamo was inscribed on Shaanxi Province's fifth batch of Intangible Cultural Heritage list.
The history of roujiamo dates back to the Warring States period, with over 2,000 years of heritage. In Classical Chinese, it was called rou jia yu mo (meat sandwiched in bread), shortened in Xi'an dialect to the current name.
History and Origins
Roujiamo's origins trace back to the Warring States period, when cold meat dishes were already recorded in the State of Han. After Qin conquered Han, the preparation method spread to Chang'an (modern Xi'an), becoming a staple food for local people.
The modern form of roujiamo took shape during the Ming and Qing dynasties. In 1925, Xi'an's famous Fanji Cured Meat shop was established, driving the standardization and branding of roujiamo and transforming it into a representative dish of Xi'an.
Preparation Methods
Xi'an roujiamo comes in two main styles: Lazhi roujiamo (Baiji mo) and Tongguan roujiamo.
Lazhi Rou (The Soul)
Made with fatty pork belly, the meat is cut into chunks and slow-cooked in aged broth (lao tang) with dozens of spices including star anise, cinnamon, Sichuan pepper, and galangal. The result is a deep red, tender, and aromatic meat that is rich without being greasy.
Baiji Mo (Xi'an Style Bread)
Made from semi-leavened dough, the perfect Baiji mo features steel circle, tiger back, and chrysanthemum heart patterns. It is crispy on the outside and soft on the inside.
Tongguan Style (Flaky Bread)
The dough is layered with oil to create a flaky texture. After baking, the exterior becomes extremely crispy with a scale-like appearance, similar to puff pastry.
